Lasagna Soup

To find all the comfort of a lasagna without having to spend hours preparing it, cook a soup that contains all its flavors, with sausages, beef/chicken broth and diced tomatoes. Crush lasagna noodles that cook in the tomato broth. Add spinach at the end of cooking and garnish with cottage cheese. A simplified lasagna!

Ingredients

  • 450 g (1 lb) meat/chicken sausages (about 5 sausages)
  • 15 ml (1 tbsp) olive oil
  • 1 onion, chopped
  • 1 liter (4 cups) beef/chicken broth
  • 625 ml (2 1/2 cups) water
  • 1 can (28 oz) diced tomatoes
  • 5 ml (1 tsp) dried oregano
  • 1 ml (1/4 tsp) crushed red pepper flakes (optional)
  • 170 g (6 oz) lasagna noodles, crushed (about 8 noodles)
  • 140 g (6 cups) baby spinach
  • 180 ml (3/4 cup) cottage cheese
  • Finely grated fresh Parmesan cheese, for serving (optional)

Preparation

In a large saucepan over medium-high heat, cook the sausages in the oil for 3 minutes, breaking it up with a wooden spoon. Add the onion and continue cooking for 4 minutes, stirring, until the meat/chicken is browned. Season with salt and pepper.

Add broth, water, tomatoes, oregano and chili pepper. Bring to a boil and simmer for 5 minutes. Add pasta. Continue cooking for 15 minutes or until pasta is tender.

Remove from heat. Add spinach and mix. Adjust seasoning.

In bowls, divide the soup. Top with cottage cheese and sprinkle with Parmesan cheese, if desired.
